An American Meal

Well, summer is the perfect time for a hot, brat or burger. Tonight I fried up a hot dog on the stove (us college folks - at least me - don't have access to a grill) with some tater tots. Delicious.

Mexican Scrambled Eggs

These scrambled eggs are fast and delicious! I used three jumbo eggs, a splash of milk and about 1/4 of a green pepper (chopped). After these are whisked and cooked over medium heat, I added some mozzarella cheese before taking it off the stove. To make the eggs Mexican, add some salsa and sour cream. Enjoy!


Almond Bark Mix

A favorite of my grandma, this melting chocolate (in white and milk chocolate) makes a delicious treat when mixed with dry items. In the past couple weeks, I've made two batches: one white, one milk. Both batches included:
  • six small blocks of chocolate (half an almond bark package)
  • several cups of Chex cereal (you can use rice or corn, about 6-8 C)
  • dried craisins (about 1/2 package)
  • mini pretzel sticks (or you can use other types of pretzels)
Melt the chocolate (1 - 1.5 min) in the microwave, then mix in all the ingredients gradually. Spread the mixture out on wax paper. It usually takes about two cookie sheets to completely spread the mixture out. Let it cool, then break into pieces and store in an airtight container.
I also made some chocolate dipped pretzel sticks!
